Brazilian chef Alex Atala researches all the ingredients and, in some cases, even oversees the production of native produce. These native ingredients are transformed using French and Italian culinary techniques and processes.

Although you will encounter more familiar European fine dining dishes, the emphasis at D.O.M. is on contemporary Brazilian and Amazonian cuisine.

Brazil’s abundant produce, and particularly produce that is found in the Amazon rainforest, features prominently on the menu. Cambuca fruit, manioc root and tucupi juice are just some examples of local ingredients that are used.

Expect unique dishes such as fresh heart of palm with scallops and coral sauce, or green tomato gel with edible flours and herbs.

For the more adventurous, there are more exotic options such as two raw unseasoned ants served on a one-inch cube of pineapple.
