People will tell you if you’re going to Copenhagen you must go to Noma, René Redzepi’s New Nordic culinary laboratory which also happens to be number one restaurant in the world. And go you should.

But there’s a catch: the waiting list is three months long. So where to eat if your trip is last minute? Rasmus Kofoed’s Geranium is the city’s second two Michelin starred restaurant and number 42 in the world.

The ambience is serene – expect a silky gray color scheme, crisp white table cloths and a view of the remarkably silent open kitchen.

Kofoed, like Redzepi, is one of the New Nordic Food Movement pioneers and that is strongly reflected in the 22-course, four-hour food spectacular that visitors to Geranium enjoy.

The New Nordic phenomenon is about using local, natural produce and giving traditional Scandinavian dishes a facelift with modern cooking methods, which includes a healthy sprinkling of molecular gastronomy techniques. Geranium delivers on that.

My lunch at the restaurant featured earthy Scandinavian ingredients like sea buckthorn, woodruff and pine. Every dish was a tribute to nature in some way. One of the appetizers was an edible package of dried flowers and apples, which became more intense the more I chewed.

Another dish featured charred potatoes on top of small decorative stones to resemble a camp fire. One of the dessert courses was beeswax ice cream.

But a word of caution: If you go to Geranium, leave the red meat cravings at home. Apart from one pork dish everything was fish or vegetarian. The consolation is you can expect some of the best seafood dishes you will probably ever eat.

The scallops we feasted on were the size of hockey balls and fleshy. The artistry involved was, at times, staggering: We enjoyed razor clams that had been pushed into shells made of dough. These shells had been marbled with squid ink so they looked completely real.
